Need A Healthy Late Night Snacks?

As the summer of 2017 rolls around about ‘everyone’ is on some kind of health kick or diet, including me.  And like everyone else I have to try to find healthy late night snacks, particularly after dinner. Like everyone else I get those late night hungries all the time and it’s hard to be good at night. Lays potato chips are always calling my name and I have to be ever conscious of the snack and the salt. 🙁

Since I’ve been on blood pressure medicine I’ve had to make a few changes to the diet like leaving out the late night potato chips and salt. 🙁 BooHoo!)

But I have found some tasty substitutes that I enjoy as healthy late night snacks.

Now everyone knows it’s not good for you to eat late night snacks, of course, unless the snack is healthy!  Also, just to stay on track, don’t eat anything after 10 p.m. too.  Here’s one of my favorites and I thought I’d share my recipe.

Barbara’s Pickling Cucumber Special Salad.

  • 2 Pickling Cucumbers (the small ones – they taste sweet and are really good)
  • 1/2 tomato or 4-5 grape tomatoes
  • 1/4 cup baby organic carrots
  • 1 slice of onion (optional) but I like a little bite to mine
Salad dressing of your choice, however, I make my own. Light olive oil, vinegar, Italian, organic package dressing.
 
If you choose a salad dressing, make sure it’s ‘lite’ or better yet, make your own.
 
And yes…you’ve noticed…I didn’t add lettuce of any kind.  You can certainly add lettuce, but I like it without.

It takes 5 minutes to fix it and throw in a bowl and you get a healthy late night snack!  Yum!

You can also use this during the day, take it for lunch or have with your evening dinner.  It’s light and just perfect for something in between meals, if you feel the need to have one.

Me, I love salads so it was easy to transition from snacks to salad and it’s better for my health.

Finding healthy late night snacks help you stay healthy particularly people like me who use these types of snacks to go from pre-diabetic state to non-diabetic.
